Step into the heart of Oaxacan culinary tradition and learn how to prepare one of Mexico's most iconic dishes: Red Mole Oaxaqueño. Your experience begins in the community of San Jose Manialtepec, where your local hosts will introduce you to the ingredients, history, and cultural significance of mole in Oaxacan cuisine. You will learn about the different chilies, spices, seeds, chocolate, and traditional techniques used to create this complex and flavorful willow. Together, we will roast, grind, mix, and cook the ingredients from scratch using traditional methods passed down through generations. As the mole simmers, you will also help prepare tamales that will be served with the finished mole. Once the meal is ready, everyone gathers around the table to enjoy the food they have prepared, accompanied by a tasting of traditional mezcal and stories about local customs and daily life in the community. This is more than a cooking class—it's an authentic cultural immersion that connects visitors with the flavors, traditions, and hospitality of rural Oaxaca.
