Vitel tonnè with a glass of wine, contrary to what one might think, is not originally from France but is very Italian: the term vitel tonnè comes from the Piedmontese dialect. Cheeses occupy a very important part of the Piedmontese enogastronomic heritage because there are more than hundreds and many of them have acquired over the years the designation DOP and DOC.
