We take you on a culinary and cultural journey. The demonstration is about more than food and drinks it is about the culture of how we eat and live. This stories blend heritage, history and help you learn about Barbados through the setting and the dishes.
Choose your option when you book.
You will be greeted by our team and escorted to the historic Mill wall and Mill bar. There the sweet sounds of soca music will welcome you. Also there, are the stations with ingredients for the two signature dishes to be made i.e. fishcakes and rum punch. After a safety briefing from your chef and bartender (especially on the potency of the rum) we go straight to interactive demonstration. In this session we prepare the cod, make the batter, add the seasonings, and show the perfect frying technique using a traditional buck pot. Next, we mix the rum punch. Even the students who didn’t master maths will get the 1-2-3-4 Rule: one part sour (fresh lime juice), two parts sweet (simple syrup), three parts strong (dark rum), four parts weak (Bowmanston special aka Barbados water). We let you pour over ice before adding a dash of bitters, freshly grated nutmeg, and a garnish. Then comes the best part - relax, eat your fishcakes, wash them down with your rum punch and enjoy the beauty of the property. You can feel free to browse the historic grounds and learn more about us. Each guest will receive a printed recipe card, for both the rum punch and fish cakes, to take home.
Fishcakes are tasty, fluffy fritters made from salted codfish, flour, herbs, spices, onions, and pepper they are deep-fried until golden brown.
